Registration fees for Potato Expo 2024 attendees and exhibitors increase Dec. 16. The annual conference and trade show is expecting a record-breaking number of exhibitors.
To date, 206 companies and organizations have registered to exhibit in the 100,000-square-foot Expo Hall at the Austin Convention Center, according to a news release. The previous record was 194 at Potato Expo 2020 in Las Vegas.
This year’s event is set for Jan. 10-11 in Austin, Texas. It’s the 16th meeting in the history of the event, hosted by the National Potato Council, and the second gathering held in Austin.
Last week, the event added a new wing to the exhibit hall to accommodate demand.
This year’s event will double the number of educational and business-oriented sessions, which will be held on three stages: the Expo Stage, the Cultivation Stage, and the Pavilion Stage in the NPC Pavilion, which will focus on the industry’s public policy and advocacy efforts.

Digital, marketing and strategy expert Steve Lerch will address the importance of creating digital content and the power of social media. He’ll be joined by Chef RJ Harvey, culinary director of Potatoes USA, and Chef Jason Morse, national spokesperson for Ace Hardware, who will share their experiences as chefs and content creators.
Fueling Performance Across Generations
Potatoes USA will help showcase how potatoes can be tailored to needs and preferences, including those of “Food as Medicine” advocates, foodservice operators, home cooks and Generation Z.
The Amazing Capabilities of AI for Food Sorting and FM Detection
A discussion of artificial intelligence’s ability to make judgments about the quality of potatoes and foreign materials in chip potatoes. This presentation will discuss AI’s current throughput capacities and what lies on the horizon for AI robots, roller tables, automated dockside and field side quality inspections.
