New chip processing line to debut next month

PPM Technologies and Key Technology will introduce a new, integrated potato chip processing line next month at SNACKEX in Lisbon, Portugal.

Designed for processors managing raw material variability, labor shortages and high-volume production, the line brings together PPM’s frying, seasoning and product handling capabilities with Key’s advanced optical sorting technology, according to a news release. Both manufacturers are Duravant operating companies.

“Potato chip processing lines that hold up under challenging conditions aren’t just well spec-ed,” said Daniel Luna, PPM Technologies director of processing. “They’re built by partners who understand what each stage demands, can anticipate future needs and are committed to making those technologies work as one cohesive unit. PPM and Key have two of the longest histories in the potato chip industry, and their depth of expertise doesn’t just show up at startup — it’s there through the life of the equipment.”

Processors producing kettle-style chips utilize PPM’s BatchWright batch fryer, which provides precise control to deliver consistent texture, color and flavor profiles. Processors producing conventional potato chips utilize the CookWright continuous fryer, which features customizable heating, belt and filtration configurations.

Both fryers are equipped with advanced oil filtration to extend oil life and reduce operating costs, along with clean-in-place capability that limits downtime during sanitation.

After frying, optical sorting is the last opportunity to remove defects and foreign material before packaging. Combining multi-channel sensor data and multi-wavelength strobing technology, Key’s COMPASS sorter identifies dark spots, green discoloration and white knots as well as fryer debris. The sorter operates without more complex laser-based systems that can increase maintenance costs, according to the release.

From inspection, product is transferred to PPM’s FlavorWright All-in-One seasoning system, which applies liquid and/or dry seasoning before weighing and packaging.

PPM’s slice feeder is equipped with a dual auger feed conveyor to meter whole potatoes into the slicer at a controlled rate, producing uniform slices for consistent frying. Horizontal-motion conveyors move chips between steps, while vibratory conveyors meter product to multi-head weighers at packaging.

Each line element is configured to fit plant layouts and production requirements.
