Calyxt to develop improved potato

Calyxt, an agbiotech company focused on developing crops with healthier characteristics, is planning to launch a second wave of products in 2019, including a potato.

The new variety will have an inactivated enzyme that will reduce the degradation of sugars in the tuber, minimizing the sweetening of cold-stored potatoes and the creation of acrylamide during frying. The start-up company’s technology improves crops without introducing any foreign DNA.

The first product launch, slated for 2018, is a soybean high in oleic acid.
