Potato Expo: A quick Q&A with Chef Duff Goldman

Duff Goldman — he’s known for his masterpieces made of cake on Ace of Cakes and other series, guest judge appearances on numerous cooking shows, and now he’s showing off his culinary prowess in Ace of Taste.

In preparation for his Potato Expo cooking competition against Chef Simon Majumdar, Spudman had a few quick questions for Duff.

What is it that drew you to Potato Expo, and what are you hoping to get out of it?

I originally saw a post on social media from a friend of mine. When I saw that post, I realized that I didn’t know anything about potatoes, and the post really intrigued me knowing that there’s a special expo just for potatoes.

We have yet to reach peak potato, so what are you hoping to see happen in the culinary world regarding potatoes?

Honestly, nothing beats a good baked potato. Layer it with toppings, YUM. Potatoes are a blank canvas. There is a lot that you can do with them: bake, fry, mash, etc. I hope I see more potato dishes as a part of a main course in the future.

Any recommendations for getting more potatoes on more plates?

My recommendation is just make sure they taste good!

Have you made any potato desserts, and if so, which is your favorite? Also, when will something like this become mainstream?

I have put mashed potatoes in cake batter before. It makes the cake texture super moist. Potato starch is something I see becoming super mainstream.
