February is for potato lovers

The Colorado Department of Agriculture is promoting February as Potato Lover’s Month, and recognizing the farmers and the many potato cultivars produced in the state. From well-known varieties such as Russet and Yukon Gold to specialty potatoes like Purple Majesty and French Fingerling, Colorado grows over 70 different varieties of potatoes. Colorado produces more than 2 billion pounds of potatoes annually, making the state the fifth largest producer in the nation.

The Department also advises shoppers to avoid potatoes with wrinkled skins, soft dark spots, cut surfaces or a green appearance. All varieties should be uniformly sized, fairly clean, firm, and smooth. The Colorado Department of Agriculture also reminds consumers that potatoes are gluten free, fat free, sodium free and are high in potassium and Vitamin C. They can look for Colorado potatoes at local grocery stores or at restaurants across the state. A recipe for Smokey Gnocchi was developed in Colorado by Chef Jason K. Morse of 5280 Culinary to celebrate this year’s Potato Lover’s Month.
